Keeping wineA good wine cellar must be dark and free from vibrations.Temperature must be constant (ideally 12°C) as fluctuations in temperature interfere with the wine's proper evolution. Above 14° deterioration is likely to be rapid (oxidation, premature ageing, and, more frequently, the appearance of bacteria). At temperatures below 12° the wine can lose its limpidity and begin to produce solid deposits. Humidity is another crucial factor. Depending on temperature, it should be kept at between 70 and 85%. Where wines are being stored in barrel, humidity is even more important. The bottles are stored on their sides in pigeonholes or palletised cases. No chemical products (hydrocarbons, paints, wood preservative, ....) must be stored in the same location. |
