The vinification

This covers all of the processes that go into making wine - mechanical, microbiological and biochemical.  The quality of the wine depends on the quality of the grape harvest, compliance with rigorous hygiene regulations, the terroir and wine-making techniques. 
The grapes must be taken quickly to the fermenting room and the equipment is cleaned beforehand and checked (the wooden barrels are soaked to improve their seal). The wine-making is carried out in several stages which vary according to the grape variety and the wine to be produced.
