The quality of the wine depends on the quality of the grape harvest, compliance with rigorous hygiene regulations, the terroir and wine-making techniques.The grapes must be taken quickly to the fermenting room and the equipment is cleaned beforehand and checked (the wooden barrels are soaked to improve their seal).
